{"id":37,"date":"2009-01-18T15:21:14","date_gmt":"2009-01-18T20:21:14","guid":{"rendered":"http:\/\/www.starkeith.net\/amanda\/?p=37"},"modified":"2009-01-20T15:25:19","modified_gmt":"2009-01-20T20:25:19","slug":"take-them-to-work-cupcakes","status":"publish","type":"post","link":"https:\/\/www.starkeith.net\/amanda\/2009\/01\/take-them-to-work-cupcakes\/","title":{"rendered":"&#8216;Take them to work&#8217; Cupcakes"},"content":{"rendered":"<p>I say this because if you keep them at home &#8211; you will eat them, and then destroy all your New Years Resolutions to eat right, be healthy &#8212; make the others unhealthy I say!<\/p>\n<p style=\"text-align: center;\"><a class=\"tt-flickr tt-flickr-Medium\" title=\"bailey's cupcake - looking down\" href=\"http:\/\/www.flickr.com\/photos\/keithius\/3207481090\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm4.static.flickr.com\/3301\/3207481090_8004b3c2fa.jpg\" alt=\"bailey's cupcake - looking down\" width=\"500\" height=\"375\" \/><\/a>\u00a0<\/p>\n<p>Okay &#8211; I had one, and the man had one&#8230;the rest are in the tupperware container and in the fridge ready for work, I&#8217;m keeping my New Years Resolution!<\/p>\n<p><strong>Take them to work cupcakes<\/strong><\/p>\n<ul>\n<li>1\/2 cup unsalted butter, room temperature<\/li>\n<li>2\/3 cup castor sugar (or superfine sugar)<\/li>\n<li>3 large eggs<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>2 teaspoons Baileys Irish Cream<\/li>\n<li>1 1\/2 cups cake flour (or all-purpose flour)<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/4 cup milk (or soymilk &#8211; I used soymilk and they came out perfect!)<\/li>\n<\/ul>\n<p><span class=\"bod\">Preheat oven to 350 F and line 12 muffin cups with paper liners.<\/span><\/p>\n<p><span class=\"bod\">Cream the butter and sugar until light and fluffy.\u00a0Add the eggs, one at a time, beating well after each addition.\u00a0Beat in the vanilla extract and\u00a0Baileys.\u00a0 <\/span><\/p>\n<p><span class=\"bod\">Add flour and\u00a0baking soda to egg\/butter mixture, stirring\u00a0gently stir to combine.\u00a0 Add milk and beat on low speed until all ingredients are combined.\u00a0\u00a0<\/span><\/p>\n<p><span class=\"bod\">Evenly fill the muffin cups with the batter and bake for about 18-20 minutes or until nicely browned and a toothpick inserted into a cupcake comes out clean.\u00a0Remove from oven and place on a wire rack to cool.\u00a0Once the cupcakes have completely cooled you can frost with the Baileys Frosting.\u00a0<\/span>\u00a0<\/p>\n<p><strong>Baileys Frosting<\/strong><\/p>\n<ul>\n<li>8oz cold cream cheese<\/li>\n<li>5 tbsp butter, room temperature<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>2 tsp Baileys Irish Cream<\/li>\n<li>2 tsp brewed coffee, cooled<\/li>\n<li>1\/2 tsp cocoa powder<\/li>\n<li>2 1\/2 cups powdered sugar<\/li>\n<\/ul>\n<p>Beat the cream cheese and butter together, once combined\u00a0add vanilla, cocoa, Baileys and coffee.\u00a0 Stir in powdered sugar and decorate those cupcakes!<\/p>\n<p>I dusted mine with\u00a0a little extra cocoa.<\/p>\n<p style=\"text-align: center;\"><a class=\"tt-flickr tt-flickr-Medium\" title=\"plate full of bailey's cupcakes\" href=\"http:\/\/www.flickr.com\/photos\/keithius\/3207481044\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm4.static.flickr.com\/3107\/3207481044_e93887511d.jpg\" alt=\"plate full of bailey's cupcakes\" width=\"500\" height=\"375\" \/><\/a>\u00a0<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I say this because if you keep them at home &#8211; you will eat them, and then destroy all your New Years Resolutions to eat right, be healthy &#8212; make the others unhealthy I say!
