{"id":34,"date":"2009-01-17T20:33:27","date_gmt":"2009-01-18T01:33:27","guid":{"rendered":"http:\/\/www.starkeith.net\/amanda\/?p=34"},"modified":"2009-01-18T11:15:50","modified_gmt":"2009-01-18T16:15:50","slug":"haloumi-and-lentil-salad","status":"publish","type":"post","link":"https:\/\/www.starkeith.net\/amanda\/2009\/01\/haloumi-and-lentil-salad\/","title":{"rendered":"You had me at &#8216;fried cheese&#8217; &#8230;"},"content":{"rendered":"<p style=\"TEXT-ALIGN: left\">Without a doubt &#8211; my <a href=\"http:\/\/www.taste.com.au\/recipes\/7590\/haloumi+with+lentil+salad\">favourite <\/a>salad in the entire world.\u00a0 You can add all sorts of things to this &#8211; peppers (aka capsicum), chili&#8217;s, mix it up with some cilantro (aka fresh coriander) or roasted butternut squash (aka pumpkin)&#8212; the sky is the limit!\u00a0 Just don&#8217;t make the same mistake I did when I tried to make this the first time&#8230;havarti is not the same as haloumi (havarti will melt!)<\/p>\n<p style=\"text-align: center;\"><a class=\"tt-flickr tt-flickr-Medium\" title=\"Haloumi with Lentil Salad 3\" href=\"http:\/\/www.flickr.com\/photos\/keithius\/3192731438\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm4.static.flickr.com\/3378\/3192731438_c5f0c4bc47.jpg\" alt=\"Haloumi with Lentil Salad 3\" width=\"500\" height=\"375\" \/><\/a>\u00a0<\/p>\n<p style=\"text-align: left;\">Make the lentil salad an hour or so before grilling the haloumi &#8212; this will allow the lentils to soak up the yummy flavours &#8212; tastes great the next day too!\u00a0<\/p>\n<p><strong>Haloumi and lentil salad<\/strong><\/p>\n<p>Serves four<\/p>\n<ul>\n<li>2 x 400g cans brown lentils, drained, rinsed<\/li>\n<li>1\/2 &#8211; 1\u00a0small red onion, thinly sliced (depends on how much you like onion)<\/li>\n<li>1\u00a0English cucumber, halved, sliced (about 1 cup total)<\/li>\n<li>3tomatoes, chopped (or 1 cup of cherry tomatoes)<\/li>\n<li>3\/4 cup mint leaves, shredded<\/li>\n<li>1 1\/2 tablespoons lemon juice<\/li>\n<li>1 tablespoon extra virgin olive oil<\/li>\n<li>250g block haloumi cheese<\/li>\n<li>2 tablespoons plain flour<\/li>\n<li>2 tablespoons vegetable oil<\/li>\n<li>Salt and pepper to season<\/li>\n<\/ul>\n<p>Combine lentils, onion, cucumber, tomatoes, mint, lemon juice and oil in a bowl. Season with salt and pepper and mix to combine.\u00a0 Allow this to hang out for an hour if you can, if you cant &#8212; its still good!<\/p>\n<p>Cut haloumi lengthways into about 8 slices. Pat-dry with paper towels. Dust lightly with flour and shake off excess.<\/p>\n<p>Heat oil in a non-stick frying pan over medium heat.
