{"id":32,"date":"2009-01-05T12:00:37","date_gmt":"2009-01-05T17:00:37","guid":{"rendered":"http:\/\/www.starkeith.net\/amanda\/?p=32"},"modified":"2009-01-04T19:28:33","modified_gmt":"2009-01-05T00:28:33","slug":"mushrooms-and-barley-and-bears-oh-my","status":"publish","type":"post","link":"https:\/\/www.starkeith.net\/amanda\/2009\/01\/mushrooms-and-barley-and-bears-oh-my\/","title":{"rendered":"Mushrooms and Barley and Bears &#8211; Oh My!"},"content":{"rendered":"<p style=\"text-align: left;\">My Dad told me about this fantastic, hearty winter soup recipe he had made after seeing it on <a href=\"http:\/\/www.abc.net.au\/tv\/cookandchef\/txt\/s2251277.htm\">tv<\/a>.\u00a0 Barley in soup always reminds me of my Nanny &#8211; she used to put pearl barley in her veggie soup and we would eat that soup, along with some homemade cornish pasties she had bought from church almost every\u00a0Sunday in the Winter time when we would visit.\u00a0<\/p>\n<p style=\"text-align: left;\">I made a huge batch of this soup and froze half for easy week night meals &#8212; and it reheated no worries!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm4.static.flickr.com\/3268\/3167892571_54c8611436.jpg\" alt=\"soup with toast\" width=\"500\" height=\"375\" \/><\/p>\n<p>\u00a0<\/p>\n<p><strong>Mushroom Barley Soup<\/strong><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<ul>\n<li>7 ounces pearl barley, cooked (simmer)\u00a0in 7 cups of water for 1 hour<\/li>\n<li>2\u00a0tablespoons butter<\/li>\n<li>1 large onion, medium dice<\/li>\n<li>2 garlic cloves, small dice<\/li>\n<li>1 tablespoon chopped fresh rosemary<\/li>\n<li>1 teaspoon chopped fresh thyme<\/li>\n<li>1oz\u00a0dried porcini &#8211; <em>soaked overnight in 500 ml hot water<\/em><\/li>\n<li>18oz\u00a0assorted mushrooms\u00a0 <em>&#8211; such as\u00a0shitake, cremini, white\u00a0 button or portobello<\/em><\/li>\n<li>1.4 cup\u00a0sherry<\/li>\n<li>4 cups\u00a0of chicken or vegetable stock<\/li>\n<li>Salt and pepper to season<\/li>\n<li>Chopped parsley to serve<\/li>\n<\/ul>\n<p>Cook the pearl barley in the 7 cups of water for approximately 1 hour, strain.\u00a0 Once the barley has been cooked, melt the butter and saute onion until soft.\u00a0 Add garlic, rosemary, thyme,\u00a0and chopped mushrooms and saute until soft.
