and &#8216;legumes&#8217; used to make me shudder &#8211; all I would think was &#8216;no flavour&#8217;.\u00a0 Boy was I wrong (but dont tell my husband that, I am always right you see&#8230;).\u00a0 So this New Year will be a year of broadened horizons, and I am starting by embracing the chickpea (aka garbanzo bean) &#8211; high in protein and full of stuff thats good for you &#8211; this dish makes a delicious non-meat meal!\u00a0<\/p>\n<p>But dont ask me what came first &#8211; the chicken or the chickpea &#8230; somet hings are meant to remain a mystery&#8230;<\/p>\n<p><strong>Spiced and Roasted Eggplant, Chickpeas and Peppers with Yoghurt Sauce<\/strong><\/p>\n<p style=\"text-align: center;\"><strong><a class=\"tt-flickr tt-flickr-Medium\" title=\"roasted eggplant, pita, and yogurt sauce\" href=\"http:\/\/www.flickr.com\/photos\/keithius\/3160768560\/\"><\/a>\u00a0<a class=\"tt-flickr tt-flickr-Medium\" title=\"closeup of yogurt sauce\" href=\"http:\/\/www.flickr.com\/photos\/keithius\/3160768342\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm4.static.flickr.com\/3083\/3160768342_47b4d99b4e.jpg\" alt=\"closeup of yogurt sauce\" width=\"500\" height=\"375\" \/><\/a><a class=\"tt-flickr tt-flickr-Medium\" title=\"roasted eggplant dish\" href=\"http:\/\/www.flickr.com\/photos\/keithius\/3159933063\/\"><\/a><\/strong><\/p>\n<p><strong>Spiced and Roasted Eggplant, Chickpeas and Peppers<br \/>\n<\/strong><strong>Serves 4<\/strong><\/p>\n<ul>\n<li>4 cups eggplant <em>&#8211; chunky bite-size dice<\/em><\/li>\n<li>1 large red onion <em>&#8211; bite-size wedges<\/em><\/li>\n<li>1 large red or yellow pepper <em>&#8211; bite-size wedges<\/em><\/li>\n<li>1 15oz can of chickpeas <em>&#8211; drained, rinsed\u00a0and patted dry<\/em><\/li>\n<li>1 1\/2 teaspoons of ground cumin<\/li>\n<li>1 1\/2 teaspoons ground coriander<\/li>\n<li>1 1\/2 teaspoons garlic powder<\/li>\n<li>1 1\/2 teaspoons chilli powder<\/li>\n<li>3 tablespoons olive oil<\/li>\n<li>Salt and pepper to season<\/li>\n<\/ul>\n<p>Preheat your oven to 450F.\u00a0 Add all the ingredients to a bowl and mix to combine &#8211; I like to use a bowl with a lid, just add and shake and youre done!\u00a0 Spread out evenly on baking sheet and bake for 20 minutes, turning once.\u00a0 Increase heat to 500F and cook for a further 10 minutes until roasty-toasty deliciousness!<\/p>\n<p><strong>Yoghurt Sauce<\/strong><\/p>\n<ul>\n<li>1\/2 cup nonfat plain yoghurt <em>&#8211; such as strained Greek Yoghurt<\/em><\/li>\n<li>2 small tomatoes roughly choped<\/li>\n<li>1\/4 cup chopped fresh mint<\/li>\n<\/ul>\n<p>Throw everything in a bowl and mix!<\/p>\n<p>I like to serve this with a mini whole-wheat pita bread &#8211;
